These are my meals from Saturday. I was into cooking 🙂 I don’t cook 3 meals a day so I feel proud. We get eggs from my husbands dads place. He doesn’t really have a farm but he has a chicken coup. They are SO good and fresh!
I have been seriously off track on my hydration intake. So I have set a goal to check my hydration needs often and make sure I am getting enough. I am using this calculator. I have managed to get down 68oz of pure delicious H2O today! The calculator recomended 64.5 oz.
Breakfast- Oatmeal (with chia seeds & dried cranberries) & coffee
Snack- my homemade chex mix (rice chex cereal, dried cranberries, sliced almonds, & semi-sweet chocolate chips)
Lunch- tomato & basil soup and turkey & cheese toasted sandwich
Dinner- Pizza, chocolate desert, & a pineapple Fanta (don’t judge)
I included the window washer because they came at lunch time and he slammed down on the window and scared us! I almost choked a bite of sandwich :p
I had kind of an off day on food. I had zero servings of fruit, and not a whole lot of veggie. For breakfast I had my usual at Starbucks, the Perfect Oatmeal and a grande non-fat Carmel Macchiato.
For a mid-morning snack I had a Peppermint Brownie cake pop I picked up with breakfast. It was SO good! It was taunting me all morning on my desk. I usually have a snack around 10:00am but I ate this cake pop around 9:00am. Just. Couldn’t. Wait.
Yes ma’am it was GOOD!
For lunch I had some left over (home made) tomato basil soup and a couple of Hawaiian rolls 🙂
I found this chart today on Pinterest (where else?). <– I am not real sure if that is proper grammer… oh well 🙂 I stopped drinking soda for an entire year once. On most days I didn’t drink caffeine at all! I didn’t even miss it! Then one day almost a year ago, we were moving into our current apartment and my mother in law helped. We bought pizza for everyone and my MIL volunteered to bring drinks. Well all she brought was soda! So of course now I blame my current soda addiction on my MIL. Not really, It probably wouldn’t have hurt me to drink the unfiltered city tap water (yuck). I am just a little spoiled. Really though I was hot and tired from doing manual labor and a cold soda sounded good. Now I am back to drinking a soda a day. I keep telling myself (usually on the way to the soda machine) that tomorrow I will give up soda again. We. Will. See.
I am thinking about starting a youtube.com vlog to document my nursing school adventure. I have been going back and forth on the idea for a big part of the day. On one side, I enjoy watching every one else’s channel on youtube.com and think it has already helped me. On the other side, I hate how my voice sounds recorded. Not too long ago I answered my phone and the telemarketer asked if my mom or dad was home….no joke. So I am not totally sure what I am going to do yet. The way my voice sounds has always been something that has bothered me. It’s hard to be taken serious when you sound 12. I really do understand other people’s point of view. When I was younger I tried smoking to deepen my voice. One, it didn’t work. Two, it was just nasty and I felt nasty every time I smoked a cigarette. So yeah I am 28 and still sound 12….
I feel very wordy today. But I have one more thing to talk about, my day 🙂
I got so much done!
1) I got CPR/BLS certified! For only $3 thanks to me working for the greatest company ever!
2) I went and exchanged a lab coat that I bought that was too short. Lesson learned: try everything on! I also bought two pairs of compression socks, that I am oddly excited about.
3) I got a bag of clothes dropped off at Good Will that was in my backseat for about 2 weeks. Don’t judge.
4) Talked to the Post 9/11 GI Bill genius on campus about how to get my school paid for.
5) Finished birthday shopping for my childhood bestie. I think she will love her gift!
6) Got gas.
7) Got a back/spinal screening done & passed!
8) Came home to find a $100 check in the mail. Highlight of the day.
(apparently an “8” followed directly with a “)” equals a smily face. I left it like that cause its kinda cute)
9) Drove back into town to the bank to deposit it.
And that my friends took ALL DAY!

Jar salad (cabbage & bok choy)- jar idea from pinterest. Also, funny story on the cabbage. I stopped by the grocery store on my way home from an eye appointment. My eyes were still REALLY dilated. I thought I had picked up a head of iceberg lettuce until I got to the check out lane and they checker started talking about how much she loved cabbage. And just a pointer, even if you don’t mind coming home with cabbage instead of your intended lettuce… operating the credit card machine is extremely hard to operate when you cannot see it!
I had some more cabbage & bok choy salad with baked tilapia and onion.
For breakfast I stopped by Starbucks on the way to work and got some oatmeal and a Pumpkin Spice Latte. I get non-fat hold the whipped cream on the coffee. I also buy the tall, drink about half of it and then fill it back up with the (free) coffee provided at work.
I had a very hard to peel orange and a granola thin for my morning snacks 🙂
For lunch I had a turkey sandwich and honey greek yogurt with sliced almonds. Today was my first time trying sandwich thins and I love them! I don’t really see a reason to every by regular bread again. BTW do you like the halloween napkin I found at work? I am not really sure who’s it was so I hope it was sanitary 😉
My husband had to work late so I didn’t have to worry about making dinner for him. I have been wanting to try and make my own sushi ever since I saw Jenn @ Peas and Crayons‘ post on the angry jalapeno rolls. You can find her sushi tutorial HERE. I loved them! I made two different kinds. One with wild pink salmon (cooked), chopped mango, and cucumber. The other one asparagus, chopped mango, and cucumber. They turned out so good! My only tip is to make sure and use a REALLY sharp knife to slice the rolls. I wish I had taken a better picture.
This morning before even getting out of bed I was on google reader. I found this smoothie recipe over at Kath Eats Real Food. I LOVE pumpkin. In fact fall might just be my favorite season because of all the flavored pumpkin stuff that starts to come out. And because Starbucks starts selling their pumpkin spice latte, which was the first coffee I ever bought from Starbucks (is it weird that I remember that morning still it was about 5-6 years ago?). I made mine a little different because I didn’t have any yogurt & I use almond milk. Here is my variation which was still super yummy:
1 + 1/4 frozen banana
1/2 canned pumpkin
1 cup vanilla almond milk
4 ice cubes
pinch of xanthan gum, all spice, cloves, and cinnamon
Topped with sliced almonds and another sprinkle of cinnamon.
I added the xanthan gum for some thickness since I didn’t have plain yogurt. I wanted to be able to eat it out of a bowl. It was really good, and I still have pumpkin for another one tomorrow!

I have been at work for 8 and a half hours and I was about to fall asleep at my desk! I was having trouble focusing, that is until I remembered I had a couple of caramel apple pops in my desk 🙂 It was JUST what I needed to get me through my last hour and a half. Caramel apple pops are my favorite but I have to stock up on them because they only sell them during fall.
In the past few weeks I have learned some very useful tips on eggs!
1. To check how old an egg is place it in water that covers the egg completely. If the entire egg floats it is bad — throw it away. If one end floats it’s ok, it’s about three weeks old.
2. The fresher the egg –> the harder it is to peel.
3. You can add a pinch of salt to your water when you are going to hard boil eggs to make it easier to peel (something about the protein coagulating).
4. If you put your eggs in ice water right after they are done they will also be easier to peel.
My father-n-law keeps chickens so we get eggs every once in a while and it helps to know how to check them for freshness since they don’t come with an expiration date… Also, I work four – ten hour days and have to get up REALLY early in the mornings so I have started to boil four eggs and peel them so I can get that protein to help wake me up in the AM. Since eggs are a big part of my weekly diet, all the tips I can get are a huge help.
